- Finely dice the onion, and roughly chop the pepper.
- Lightly fry onions with garlic, until onions are translucent.
- Add pepper, mince and spices and raise to a medium heat until mince is completely cooked. (Approx. 10 mins)
- Add the tomato puree and mix with juices from the beef. Cook until the sauce coats the beef.

250 g extra lean minced beef

2 peppers
2 garlic cloves, crushed or chopped

Handful of torn fresh parsley (optional)

- Choosing leaner varieties of beef will help you reduce the amount of fat in a dish. You can also swap some or all of the mince in this recipe for extra vegetables, mixed beans or meat free mince.
- If you want to reduce the calories in this meal, don’t have the sour cream or guacamole or choose reduced fat varieties.
