Ingredients

250 g extra lean minced beef

2 onions

2 peppers

2 garlic cloves, crushed or chopped

2 tbsp. tomato puree

2 tsp. cumin

2 tsp. chilli flakes, (more or less depending on preference)

1 tsp. vegetable oil

10 tortilla wraps

 

Handful of torn fresh parsley (optional)

 

To serve:

Sliced tomatoes (around 3 or 4 medium tomatoes)

Small pot of sour cream

Small pot of guacamole

Method

  1. Finely dice the onion, and roughly chop the pepper.
  2. Lightly fry onions with garlic, until onions are translucent.
  3. Add pepper, mince and spices and raise to a medium heat until mince is completely cooked. (Approx. 10 mins)
  4. Add the tomato puree and mix with juices from the beef. Cook until the sauce coats the beef.
  5. Spoon between tortillas and top with fresh parsley, sliced tomatoes, and a tablespoon of sour cream and guacamole on each

Tips

  • Choosing leaner varieties of beef will help you reduce the amount of fat in a dish. You can also swap some or all of the mince in this recipe for extra vegetables, mixed beans or meat free mince.
  • If you want to reduce the calories in this meal, don’t have the sour cream or guacamole or choose reduced fat varieties.
  • Cooking for fewer people? Save the mince mixture to use next week – pop it in the freezer.
