I would like to request a list of establishments in Scotland that have been approved to produce Biltong. In addition, of these establishments, I would like to find out how I can establish exactly what CCPs have been put in place in their particular HACCPs. There does not seem to be any indication of what would or would not be acceptable for the production of Biltong and the associated products.
In Food Standards Scotland (FSS) we have 1 approved establishment that produces Biltong the details of which are below and published on our website:
AD 651 – Highland Biltong, Ard-Na-Slaite, St Catherine’s, Cairndow, PA25 8AZ. Local Authority - Argyll and Bute Council.
Please note that other approved meat product establishments may also produce Biltong however there is no requirement for them to indicate specific products produced therefore FSS cannot confirm other establishments from the information available.
FSS is not involved in approving these establishments, the Local Authority Environmental Health Service is the competent authority for this process. FSS has published guidance on the approval process and a technical package which is supported by training to ensure consistency of approach by Officers working in this area.
